Caribbean Wallpaper Wednesday: Sweeten Your 4th with Mangos
Happy 4th of July!
All across the United States, this day means flag waving, parades, fairs, baseball games, political speeches, fireworks and, of course, barbecues. All that may be enough for your average American, but at my house, the 4th is also synonymous with one of my favorite Caribbean treats: mangos!
Steve may have confessed his dark secret that he’s not a fan of mangos, but rest assured, I’m nothing like my brother in this regard. I love mangos. I love traveling through the West Indies during mango season. And I love adding this sweet taste of the Caribbean to Summer holidays whenever I can.
For the 4th, that usually means mango salsa.
This year, I’ll be trying a new recipe… and you can, too. It’s quick, easy, and sounds delicious.
- ¾ cup finely diced ripe mango
- ½ cup finely diced ripe papaya
- ½ cup finely diced red bell pepper
- ½ cup finely diced English cucumber
- ½ cup finely diced red onion
- 1 tablespoon finely chopped fresh mint
- 1 to 2 teaspoons minced jalapeño chile, without the seeds
- 2 tablespoons fresh lime juice
- ½ teaspoon kosher salt
In a medium sized bowl, just combine all the ingredients. Cover, and refrigerate for at least 30 minutes, then bring it to room temperature before serving. Done!
It promises to be sweet, yet spicy. Perfect for tugging your mind south to the serene shores of the Caribbean no matter where your Independence Day celebrations may find you.
