We couldn’t let our Month of Rum festivities end without a few words about the iconic bottle pictured here. If you’ve ever spent any time behind a bar, or you love to mix cocktails at home, then certainly you’re familiar with Angostura Aromatic Bitters, right? There’s arguably no other home grown West Indian product better-known throughout the world of mixology, if not the entire world in general. Most EVERYBODY knows Angostura Bitters, but on a recent visit to The House of Angostura in Trinidad I learned that ONLY FIVE PEOPLE know the real secret in this sauce, and NOBODY knows all the ways in which it’s used.

Few are the secret ingredients more essential to creating that uniquely West Indian flavor we all know and love than a simple sauce called Browning. Even if you’ve enjoyed island food your whole life, it’s entirely possible you’ve never heard of this stuff, so understated and surreptitious are its magical methods.
The proverbial straw that stirs the drink of so many island favorites – oxtail stew, peas and rice, stew chicken, stew beef, even black cake – Browning is an absolute essential in any West Indian kitchen… and yet, you won’t find a bottle of it like this in many of ‘em.

Sadly, though, I couldn’t find any blood sausage today (that will have to wait ’til Halloween 2012), so let’s settle for something a little more tame, though no less tasty – Angostura Bloody Mary Seasoning!

Taste of the Caribbean: You, Marriage Material? Not Without Adobo

I have no scientific data to back this up (my subscription to Cosmo lapsed years ago), but I imagine that in general, men tend to have less of a laundry list of criteria for determining whether or not a woman is marriage material than our more practical female counterparts.
Certainly, the majority of us guys live in the “here and now” when it comes time to pop the Big Question, placing far greater emphasis on our mate’s looks and sexual appetite than the actual preview of what’s to come in your Golden Years.
You know, that time when the looks, and by extension the sex, begin to fade?

Taste of the Caribbean: ‘Tis Always the Season for Green Seasoning

When meat, chicken or fish are on the menu in most of the Caribbean (when aren’t they?), it’s a good bet that the green and gooey stuff in the bottles above is being employed to add just the right amount of island spice and flavor. It’s called green seasoning, and like the fabulous condiment that is kuchela, it’s a staple of many, many Caribbean kitchens.
Green seasoning is used many different ways in Caribbean cooking, though its magical talents as a marinade are what draw most people to it. A grilled steak soaked overnight in this stuff yields an amazing spicy flavor that will put you right back in the region with one bite.
