Monster Lobster – It’s What’s For Lunch at Rhythms at Rainbow Beach, St. Croix

Size may not always be everything, but when it comes to lobster most agree that bigger is better, right? That was certainly the sentiment on a recent December visit to Rhythms at Rainbow Beach. The venerable beach bar at the west end of St. Croix has long been the place for Sunday funday partying on our home island. In the old days, though, the food never lived up to the nice vibes. Cold beers and strong drinks were paired with over-fried options marginally made more edible with each passing drink. Things are different now, though, especially during lobster season. Fresh, locally caught monster lobster like this guy go into making lobster bites, lobster tacos, and other treats, elevating the good times like never before.
